About the Role:
An exciting opportunity has arisen for an Executive Chef to join the culinary team at Jumeirah Messilah Beach Hotel & Spa, Kuwait, providing leadership and direction in menu design and food production to ensure the culinary operation achieves its goals and contributes to the guest experience and overall profitability of the hotel whilst maintaining Jumeirah brand standards.
Your main duties will include:
Overseeing the culinary processes of the hotel and ensuring that everything is up to standard including food, manning and HACCP.
Participating in the preparation of the annual business plan to ensure the culinary operation is adequately represented.
Ensuring that HACCP and other local regulations are adhered to.
Liaising with Purchasing to ensure prompt and efficient purchasing, food quality, issuing of supplies, stock and inventory control.
Liaising with Stewarding to ensure an adequate supply of equipment and to ensure kitchen cleanliness and hygiene meet the required standards.
Liaising with Engineering to ensure prompt and efficient repair and maintenance.
Liaising with Outlet Managers to monitor food quality, plan “specials” and discuss operational problems.
Making recommendations to Management for modernization of equipment, service methods and presentation to improve guest satisfaction.
Providing creative culinary ideas to project and enhance the image and reputation of the culinary operation.
Frequently verifying that the dishes served in the outlets meet guest expectations and hotel standards.
Monitoring and analyzing the menus and product of competitive restaurants and keep up to date with international culinary trends to maintain a competitive advantage.
Conducting colleague performance appraisals to review colleagues’ general performance and discuss any areas for fine tuning / development – and highlight areas of strength.
Maximizing motivation, morale and consistently maintain discipline and discipline related documentation following hotel guidelines and local legislation.
Performing any other duties that management may reasonably require. About You:
In order to be considered for this role, you will have an internationally recognized Culinary qualification, an internationally approved Food Safety Certificate, and similar experience working in a five star luxury hotel in the Middle East. This is a very “hands on” and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure and be passionate about producing cuisine of the highest possible standards. It is also essential that you have good command of the English language (spoken and written) and you should be proficient in Microsoft Office applications.
